Peach Cobbler

Ingredients

  • Peach Filing:
  • 5 c fresh sliced peaches or 2-1 lb., 4oz can, drain and reserved juice
  • 1/4 c juice
  • 1/2 c sugar
  • 2 tbsp. flour
  • 1 tbsp. lemon juice
  • 1/2 tsp. vanilla
  • 1/4 tsp. almond extract
  • 1/2 tsp. cinnamon
  • 1/4 tsp. salt
  • 2 tbsp. butter
  • Batter:
  • 1/2 c flour
  • 1/2 c sugar
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tbsp. butter
  • 1 egg (slightly beaten)

Directions

  1. Peach Mixture:

  2. Combine all ingredients, except the butter and place in 8X8 dish/pan. Then dot with the butter.

  3. Batter:

  4. Combine all ingredients until smooth. Drop 9 portion over filling spacing evenly.

  5. Bake at 375 fro 35-40 minutes or until peaches are tender and crust is golden.
