Middle Eastern Pasta Salad

Ingredients

  • 1 (13.5 oz) Box Dreamfields Rotini Pasta
  • 1 Tbls olive oil
  • 1 cup onions, thinly sliced
  • 2 (15 oz) cans chickpeas
  • 2 cloves garlic, minced
  • 2 Tbls ground cumin
  • ⅓ cup Mango Chutney
  • 1/4 cup olive oil
  • 2 Tbls lime juice
  • Salt and Pepper to taste
  • 1 cup fresh parsley, finely chopped

Directions

  1. Cook pasta according to package directions. Drain and set aside.

  2. In a large skillet heat olive oil over medium high heat. Add onions, and sauté until soft. Add chickpeas, garlic, and cumin. Stir and cook for 3-5 minutes.

  3. Meanwhile in a bowl whisk together mango chutney, olive oil, and lime juice. Add salt and pepper to taste.

  4. In a large bowl combine cooked pasta, chickpea mixture and chutney mixture. Toss to coat. Adjust seasoning to taste. Mix in parsley.

  5. Store in the fridge until ready to serve. Great served hot or cold.
