Charleston Red Rice

Ingredients

  • 6 strips lean bacon
  • 1/2 cup chopped onion
  • 4 green onions, minced, with green tops
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup long-grain rice, uncooked
  • 1 cup minced cooked ham
  • Salt, pepper and hot pepper sauce, to taste

Directions

  1. Heat a heavy skillet; add the bacon strips and cook them until crisp. Remove the bacon strips and drain on paper towels.

  2. Cook the onion and greenonions in the remaining bacon fat until tender. Crumble the bacon and return to the skillet, along with the tomatoes, rice, ham, salt, pepper and hot sauce.

  3. Reduce the heat to low and cook for 10 minutes.

  4. Transfer the mixture to a buttered 1-1/2 quart casserole. Taste and adjust seasonings. Cover and bake at 350° for 1 hour, stirring every 10 to 15 minutes.

  5. Makes 4 to 6 servings.
