Potato Candy

Ingredients

  • 1 small, COOLED potato (bake or microwave)
  • 2-3 c powdered sugar
  • 1 tsp. vanilla
  • 1/2-2/3 c creamy peanut butter

Directions

  1. Mash potato & add powdered sugar & vanilla.

  2. Add additional cup of powdered sugar a bit at a time until the dough can be rolled out.

  3. Roll dough to 1/4" on a powered sugar surface.

  4. Spread peanut butter in thin layer over the top of the dough.

  5. Roll it up like a jelly roll starting at the long side.

  6. Wrap in plastic wrap. Refrigerate for 2 hours.

  7. Cut in 1/2" slices. Keep refrigerated.

  8. Makes 1 1/2 pounds.
