Scandinavian Rum Pudding

Ingredients

  • 1/4 cup cold water
  • 2 tsp. unflavored gelatin
  • 4 egg yolks, slightly beaten
  • 2 cups heavy cream
  • 1/2 cup sugar
  • 1/4 tsp. salt
  • 3 Tbsp. rum

Directions

  1. Set out 6 custard cups.
  2. Pour the water into a small cup or custard cup. Sprinkle gelatin over water. Let gelatin stand about 5 minutes to soften.
  3. Meanwhile, blend egg yolks, heavy cream, sugar and salt together well in the top of a double boiler. Cook over simmering water, stirring constantly and rapidly, until egg yolk mixture coats a silver spoon. Remove from heat and strain into bowl. Immediately blend in softened gelatin, stirring until gelatin is completely dissolved. Set aside to cool, stirring occasionally. Add rum and stir until thoroughly blended.
  4. Pour mixture into the custard cups and set in refrigerator to chill (about 2 hours).
  5. When ready to serve, unmold desserts by carefully running a knife around inside edges of cups; invert onto serving dishes.
  6. Serve with loganberries or Raspberry Sauce.
