Self-Saucing Vanilla Pudding

Ingredients

  • 1 cup sifted all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt, divided
  • 1/4 cup butter, softened
  • 2/3 cup sugar
  • 1 egg
  • 4 tsp. pure vanilla extract, divided
  • 1 1/2 tsp. grated orange peel
  • 1/2 cup hot water
  • 1 1/2 cups orange juice
  • 1/2 cup sugar

Directions

  1. Sift flour with baking powder and 1/4 tsp. of the salt; set aside.
  2. In a small mixing bowl, cream butter with the 2/3 cup sugar. Beat in egg. Add 2 tsp. of the vanilla and orange peel. Add flour mixture
  3. alternately with water. Turn batter into a well buttered 8×8×2-inch pan; set aside.

  4. Combine orange juice with the 1/2 cup sugar and remaining 2 tsp. vanilla and 1/4 tsp. salt; well mixed. Pour over cake batter. Bake in a preheated 350 degree oven 45 minutes or until cake tester comes out clean. Cut into 9 squares while still warm. Serve warm or cool and spoon some sauce over each portion.
