Slimming Strawberry Pudding

Ingredients

  • 2 envelopes unflavored gelatin
  • 1/2 cup cold water
  • 1 cup skim milk, heated to boiling
  • 1 tsp. Sweet'N Low (4 packets)
  • 1 tsp. almond extract
  • 1 quart fresh strawberries

Directions

  1. In 5-cup blender, sprinkle unflavored gelatin over ice ; let stand 3 to 4 minutes. Add hot milk and process at low speed until gelatin is completely dissolved, about 2 minutes. Add Sweet’N Low, almond extract and strawberries; process at high speed until strawberries are pureed. Pour into dessert dishes and chill until set.
