southern Bread Pudding

Ingredients

  • 6 cups Rhodes White Bread Dough, baked and cubed
  • 3/4 cup egg substitute
  • 2 tsp. vanilla
  • 2 cups skim milk
  • 1 tsp. cinnamon
  • 1/2 cup sugar
  • 1 tsp. nutmeg
  • 1/2 cup raisins
  • 1/2 cup red delicious apples, chopped

Directions

  1. Bake bread dough as instructed on package. Using a large bowl, beat egg substitute on high speed until foamy. Add sugar, vanilla, nutmeg and cinnamon. Continue beating on a lower speed while adding milk. Leaving the crusts on, cut about 6 slices of
  2. Rhodes bread into 1 inch cubes. Spray inside of an 8 inch square baking pan with non-stick cooking spray and add bread cubes. Sprinkle raisins and chopped apples over bread cubes. Pour milk mixture over bread cubes. Cover and refrigerate 40 to 60 minutes. Stir after 30 minutes of soaking to completely submerge all bread cubes. Bake at 350 degrees for 45 minutes to 1 hour or until pudding is firm and brown. Cool slightly and cut into squares. Serve warm. Top with fat-free vanilla frozen yogurt, if desired.
