Spanish Caramel Custard (Flan)

Serves 8 people

Ingredients

  • 3 cups sugar
  • 1/2 cup boiling water
  • 6 eggs
  • 1 Tbsp. anisette
  • 1 Tbsp. vanilla
  • Dash nutmeg
  • Dash salt
  • 2 cups scalded milk

Directions

  1. Melt 1 cup of the sugar in a heavy skillet over low heat, stirring constantly. When mixture is light brown, remove from heat and slowly add boiling water; stir and boil until caramel is dissolved. Pour into 8 custard cups.
  2. Beat eggs until frothy. Add remaining sugar, anisette, vanilla, nutmeg and salt; heat well. Add milk gradually. Pour mixture into caramel cups. Place cups in a pan of water and bake at 350 degrees for 30 to 40 minutes or until custard is set. Cool; then chill in refrigerator. When ready to serve, loosen edges with a spatula and turn mold upside down. The caramel tops the pudding.
