Steamed Apple-Bread Puddings

Serves 2 people

Ingredients

  • 1 beaten egg
  • 3/4 cup skim milk
  • 3 Tbsp. sugar
  • 1/2 tsp. finely shredded orange peel
  • 1/4 tsp. vanilla
  • 1/8 tsp. ground nutmeg or cinnamon or few drops almond extract
  • 1 cup dried raisin or whole wheat bread cubes (1 1/2 to 2 slices)
  • 1/3 cup chopped peeled apple
  • 1 1/2 cups water

Directions

  1. Beat together egg, milk, sugar, orange peel, vanilla and nutmeg. Toss together the bread cubes and apple; place in two 8 oz. microwave safe custard cups. Pour half of the egg mixture over bread mixture in each custard cup. Add water to dish. Place colander in dish. Set custard cups in colander.
  2. Cover and cook on high for 6 to 7 minutes or until knife inserted in center of bread puddings comes out clean, giving dish a half-turn once. Let stand for 20 to 30 minutes, then turn puddings out onto serving plates. Serve warm or chilled.

  3. Note: for dried bread cubes, let the bread cubes stand, loosely covered, at room temperature overnight.
