Raspberry and Lime Ice Pops

Ingredients

  • 1 cup sugar
  • Finely grated zest of 1 lime
  • 1 1/4 cups water, divided use
  • 4 cups raspberries, rinsed
  • 2 to 3 Tbsp. freshly squeezed lime juice

Directions

  1. In a small saucepan, combine the sugar, lime zest and scant 1/2 cup water and bring to a simmer. Simmer until sugar is dissolved.
  2. Put raspberries in food processor with the lime syrup and the remaining 3/4 cup water and blend to a puree. Add 2 Tbsp. lime juice and taste to see if it’s sharp enough. If not, add a little more to achieve an equal balance of sweet and sharp.
  3. If desired, strain mixture to remove seeds and pour mixture into your ice pop molds, leaving 1/4 inch at the top to let the mixture expand when it freezes. Insert the ice pop sticks, and freeze.
  4. makes 8 to 10 pops
