Maple-roasted squash

Serves 4 people

Ingredients

  • 1 (2lb. pk.) peeled, cubed butternut squash
  • 1 tbsp. olive oil
  • salt
  • 1/3 c maple syrup
  • 1/2 tsp. pumpkin pie spice
  • pinch of ground red pepper (cayenne)

Directions

  1. Line 15 1/2″ × 10 1/2" jelly roll pan with foil.

  2. Place squash in pan and drizzle with oil.

  3. Sprinkle on salt and toss to coat.

  4. Roast squash at 425 for 15 minutes.

  5. Stir maple syrup with spices.

  6. Toss squash with maple syrup mix.

  7. Roast 15-20 minutes, until tender.

  8. Serve with pan juices.
