Scalloped potatoes

Serves 6 people

Ingredients

  • 1/4 c chopped onion
  • 1/4 c butter/mar
  • 1/4 c flour
  • 1 1/2 tsp. salt
  • 1/8 pepper
  • 2 1/2 c milk
  • 5 large potatoes, peeled, sliced thin
  • Cheese potatoes:
  • 3/4 c shredded American cheese

Directions

  1. Sauce:

  2. Cook onion in butter until tender (not brown)

  3. Stir in flour, salt, pepper. Add milk.

  4. Cook and stir until thickened and bubbly.

  5. Cook and stir 1-2 minutes more.

  6. Remove from heat.

  7. Place 1/2 of sliced potatoes in greased 2 qt. casserole.

  8. Cover with 1/2 of sauce.

  9. Repeat layers. Bake at 350 for 45 minutes.

  10. Stir and cook 30 more minutes.

  11. Cheese potatoes;

  12. Reduce salt to 1 tsp.

  13. Stir 3/4 c Amer. Cheese into sauce until melted.

  14. Cook the rest as directed previously.
