Hashed Brown potatoes

Ingredients

  • 3 medium potatoes
  • 3 tbsp. butter
  • 1/4 c finely chopped onion
  • 1/2 tsp. salt
  • dash pepper

Directions

  1. Prepare and cook whole potatoes for 20-25 minutes. Drain and chill.

  2. Peel potatoes and shred to make 3 c potatoes.

  3. Melt butter in skillet.

  4. Combine potatoes, onion, salt, and pepper.

  5. Pat into the skillet.

  6. Cook over low about 15-20 min. until inside is crisp.

  7. Cut with a spatula to make 4 wedges. Flip.

  8. Cook 5 more minutes until golden.
