Cheddar Squash Puff

Serves 9 people

Ingredients

  • 2 lb. zucchini or yellow crookneck squash
  • 1 c sour cream
  • 2 beaten egg yolks
  • 2 tbsp. flour
  • 2 stiff beaten egg whites
  • 1 1/2 c shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 c fine dry bread crumbs
  • 1 tbsp. meted butter

Directions

  1. Thinly slice unpeeled squash to make 6 cups.

  2. Cook, drain well.

  3. Combine sour cream, egg yolks, and flour.

  4. Food in the beaten egg whites.

  5. In 12×7 1/2x 2 baking dish.

  6. Layer 1/2 squash, egg mix and cheese.

  7. Sprinkle with bacon. Repeat.

  8. Combine bread crumbs and butter. Sprinkle.

  9. Bake at 350 for 20-25 minutes.
