Steamed Graham Pudding

Ingredients

  • 1/2 cup raisins
  • 1 Tbsp. white flour
  • 1 cup graham flour
  • 1/4 cup corm meal
  • 2 tsp. baking powder
  • 1/4 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 tsp. cinnamon
  • 1/4 tsp. mace
  • No. 2
  • 1 cup raisins
  • 1 cup sifted white flour
  • 1 cup graham flour
  • 1 tsp. salt
  • 3/4 tsp. baking soda
  • 1 cup molasses
  • 1 cup sour milk
  • 1 egg, beaten
  • 1/4 tsp. cloves.
  • 1/4 tsp. allspice
  • 1/4 tsp. ginger
  • 1/2 cup molasses
  • 1/2 cup sour milk
  • 1/4 cup ground cracklings

Directions

  2. Mix raisins and white flour. Mix dry ingredients thoroughly. Add molasses, milk, cracklings, and raisins; mix well. Fill a greased mold 2/3 full, cover tightly and steam 3 hours. Serve with Caramel or Lemon Sauce.
  3. No. 2

  4. Mix raisins with 1/2 cup of the white flour. Mix remaining white flour with dry ingredients. Add molasses, milk and egg and blend thoroughly. Add raisin mixture. Fill greased pudding mold 2/3 full and steam 2 1/2 hours. Serve hot with any desired pudding sauce.
  5. May use dated, currants, nuts or coconut instead of raisins
