Strawberry Meringue Parfaits with Balsamic Syrup

Ingredients

  • 1/2 cup balsamic vinegar
  • 4 Tbsp. sugar, divided
  • 24 oz. strawberries, hulled and sliced 1/4 inch thick
  • 1 cup heavy cream
  • 8 oz. mascarpone cheese
  • 1 tsp. vanilla extract
  • 4 oz. meringue cookies, crumbled (about 12)

Directions

  1. Combine vinegar and 2 tablespoons sugar to a small saucepan. Bring to a boil over medium-high heat, stirring to dissolve sugar. Boil about 8 minutes, or until thick. Let cool. Combine balsamic syrup with berries.
  2. Beat heavy cream, mascarpone, remaining
  3. 2 Tbsp. sugar and vanilla in the bowl of an electric mixer until soft peaks form.

  4. Layer strawberries, cream mixture and crumbled meringues in glasses. Serve immediately.
