Strawberry Mousse Dolfi

Ingredients

  • 2 pkg. (16 oz. each) frozen strawberries, thawed or 2 quarts fresh, hulled
  • 4 envelopes unflavored gelatin
  • 1/2 cup water
  • 1 cup Dolfi Fraise Des Bois (Strawberry flavored liqueur)
  • 2 cups (1 pint) heavy cream, whipped
  • Sauce
  • 6 egg yolks
  • 1/4 cup sugar
  • 2 cups milk or half and half
  • 1 Tbsp. vanilla
  • Fresh strawberries, additional
  • whipped cream

Directions

  1. Puree strawberries in a blender for 1 quart puree. (Add water, if necessary. In a saucepan, mix gelatin and water. Stir over heat until gelatin is dissolved. Stir in Fraise Des Bois. Stir this mixture into strawberry puree. Chill until slightly thickened. Fold in whipped cream.
  2. Pour into a 2- quart mold and chill until firm. In a saucepan, mix egg yolks and sugar.
  3. Gradually stir in milk. Stir constantly over very low heat until mixture coats a metal spoon. Remove from heat and stir in vanilla. Cover and chill.

  4. To serve, dip mold into lukewarm water for a few seconds, tap to loosen and invert onto serving platter. Surround with strawberries and decorate with rosettes of whipped cream. Beat sauce again and spoon over each serving.
  5. makes 1 2-quart mold.

  6. To prepare a tiered mold, pour mousse mixture into 2 heart-shaped molds- one 1 1/2 quart mold and a small 2 cup mold. Chill and garnish as above.
