Suet Pudding

Traditional holiday dessert. if you want to serve it flaming, sprinkle the unmolded pudding with sugar, then sprinkle with slightly heated Cognac, rum or other spirit and ignite.

Serves 6 people

Ingredients

  • 2 cups finely chopped, peeled apples
  • 3 cups soft bread crumbs
  • 1 cup raisins
  • 1 tsp. cinnamon
  • 1/2 tsp. mace
  • 1/2 cup finely chopped citron or candied orange peel
  • 1/2 cup finely chopped suet
  • 2 eggs, slightly beaten
  • 1/2 tsp. salt
  • 1/2 cup molasses
  • 1 cup milk
  • 1 Tbsp. cornstarch
  • Pudding sauce or hard sauce to garnish

Directions

  1. Combine first 6 ingredients in bowl, then work in suet. Mix remaining ingredients, except sauce, and stir into suet mixture.
  2. Put in top of ungreased 2-quart double boiler and steam over simmering water, adding more boiling water as necessary, 2 1/2 hours, or until done. Unmold and serve with sauce.
