Sunny Citrus Parfaits

Serves 6 people

Ingredients

  • 1 envelope unflavored gelatin
  • 3/4 tsp. Sweet 'n' Low (2 packets)
  • 1/2 cup orange juice
  • 2 eggs, separated
  • 1 cup skim milk
  • 1 tsp. orange extract
  • 1 medium orange, chopped

Directions

  1. In medium saucepan, mix gelatin with sweetener, blend in egg yolks, beaten with juice. Let stand 1 minute. Stir over low heat until gelatin is completely dissolved, about 5 minutes. Add milk and orange extract. Pour into large bowl and chill, stirring occasionally until mixture mounds slightly when dropped from spoon.
  2. In medium bowl, beat egg whites until stiff. Fold into gelatin mixture in parfait glasses or dessert dishes, alternately layer gelatin mixture with orange, Chill until set.
