Sweett Potato Pudding

Serves 8 people

Ingredients

  • 2 cups mashed cooked sweet potato
  • 4 Tbsp. butter, melted
  • 1/3 cup dark brown sugar
  • 1/3 cup white sugar
  • 4 eggs, well beaten
  • 2 tsp. vanilla
  • 2/3 cup orange juice

Directions

  1. Preheat oven to 350 degrees. Grease a 2-quart ovenproof casserole.
  2. Mix potatoes, butter, brown and white sugars, eggs, vanilla and orange juice well. Pour into casserole.
  3. Bake, uncovered, for 30 minutes. Serve hot or cold. (And top with whipped cream or ice cream, if desired.)
