Triple Chocolate Pudding

Ingredients

  • 1 quart (4 cups) whipping cream
  • 1 cup sugar, divided use
  • 4 oz. chopped bittersweet chocolate
  • 1/4 cup cocoa powder
  • 1 Tbsp. cornstarch
  • Pinch salt
  • 4 large egg yolks
  • 3 Tbsp. unsalted butter
  • 1/2 tsp. pure vanilla extract

Directions

  1. Heat cream and 1/2 cup of the sugar in saucepan over medium heat until mixture comes to simmer. Simmer 2 minutes. Place chocolate in heat-resistant bowl. Pour hot cream mixture over; stir until chocolate melts.
  2. Stir together remaining 1/2 cup sugar, cocoa, cornstarch and salt in medium saucepan. Whisk in milk and blended. Whisk in egg yolks one at a time. Add cream mixture to saucepan. Cook, stirring constantly, over medium heat until mixture thickens and just begins to boil, about 5 minutes.
  3. Remove pudding from heat; strain through fine mesh strainer into bowl. Stir in butter and vanilla. Place plastic wrap directly onto surface of pudding; refrigerate until chilled, 3 hours or overnight.
