Vanilla Apple ‘Pudding’

Ingredients

  • 1/2 cup butter, softened
  • 2 cups granulated sugar
  • 2 tsp. vanilla extract
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 tsp. baking soda
  • 2 tsp. ground cinnamon
  • 4 cups coarsely chopped, cored and peeled apples
  • 1 cup chopped walnuts, optional
  • 1/2 cup finely packed brown sugar
  • Whipped cream, for serving

Directions

  1. Heat oven to 350 degrees. Coat a 9 × 13- inch baking dish with cooking spray or butter.
  2. In a large bowl, with an electric mixer, cream butter, sugar and vanilla until light and fluffy. Add eggs, one at a time, mixing well after each addition. Continue beating until mixture is fluffy. Add flour, baking soda and cinnamon and mix well; the mixture will be crumbly.
  3. Add apples and walnuts and mix just until incorporated. Press mixture into he bottom of prepared pan and sprinkle with brown sugar.
  4. Bake 30 to 35 minutes or until golden brown. Serve warm with a dollop of whipped cream.
