Yam Date Pudding

Serves 10 people

Ingredients

  • 1 cup pitted dates
  • 1 cup raisins
  • 1 cup milk
  • 1/2 cup flour
  • 1 cup sugar
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1/4 tsp. salt
  • 3ggs
  • 3 cups cooked, peeled and mashed yams
  • 1/2 cup maraschino cherries, cut in half
  • 1 tsp. grated orange zest
  • 1 cup pecans

Directions

  1. Combine dates, raisins and milk in saucepan; cook over low heat 20 minutes until dates are tender, stirring occasionally.
  2. Sift together flour, sugar, nutmeg, cinnamon and salt. Stir in date mixture. Add eggs and yams; mix well. Stir in cherries, orange zest and pecans. Turn into well greased 2 quart casserole. Steam over medium heat for 2 hours. Serve with hard sauce if desired.
