Cornish Game Hen with Honey and Paprika

Ingredients

  • 2 Cornish game hens
  • 2 Tbsp. honey
  • 1 Tbsp. lemon juice
  • 1 1/2 tsp. smoked paprika, or sweet or mild
  • Salt and pepper

Directions

  1. Heat oven to 350 degrees (or 425 degrees for chicken). Rinse hens and pat dry with paper towels.
  2. Microwave honey for 15 seconds (or heat in a small saucepan) until it becomes an easily pourable liquid. Mix in lemon juice and paprika. Brush game hens thoroughly with this mixture, season with salt and pepper, and place on a rack atop a baking sheet.
  3. Roast 1 hour for hens weighing less than 1 lb. 2 oz. or 1 1/4 hours for hens weighing more than that, or until the internal temperature reaches 165 degrees.
  4. Keep a close watch, and lightly cover them with foil when the birds start to get too brown. After 45 minutes, baste with more of the honey-paprika mixture.
  5. let reat 10 minutes before serving.
