Warm Orange Rice Pudding

Serves 4 people

Ingredients

  • 1 cup water
  • 2 tsp. vanilla extract
  • 1 tsp. ground ginger
  • 2 Tbsp. sugar
  • 1 cup Arborio rice
  • 1 Tbsp. orange zest
  • 2 cups low-fat milk
  • 1/4 cup orange segments

Directions

  1. In a saucepan, bring water to a boil and add vanilla , ginger, sugar and rice.
  2. Lower heat and allow rice to absorb liquid, stirring as needed, about 10 minutes. When most of the liquid has been absorbed, add the orange zest and 1 cup milk.
  3. Allow the rice to absorb liquid and then add the other cup of milk.
  4. Continue cooking until all liquid is absorbed and rice is fully cooked.
  5. Serve in individual bowls with an orange segment on top.
