Pork on Pork with Sweet Potato Mash

Ingredients

  • 4 center cut pork chops
  • 3 medium sweet potatoes, peeled and cut into 2-inch pieces
  • 2 Tbsp. plus 1 tsp. salt, divided
  • 3/4 cup maple syrup
  • 2 Tbsp. butter
  • 1 tsp. ground black pepper
  • 1 Tbsp. olive oil
  • 6 slices hickory smoked, classic cut bacon, diced
  • 4 sprigs fresh thyme, finely chopped

Directions

  1. Place sweet potatoes and 1 Tbsp. salt in a pot and cover with water. Bring to a boil; reduce heat and simmer until potatoes are soft. Drain potatoes, put back in pot and mash with a fork. Add maple syrup, butter and 1 tsp. salt. Mix until all ingredients are fully combined. Cover to keep warm.
  2. Season pork chops, on both sides, with pepper and remaining 1 Tbsp. salt. heat oil in a heavy-bottom pan. Once oil is hot, add seasoned pork chops. Cook pork chops 2 at time to not over-crowd the pan. Cook 4 to 5 minutes per side until internal temperature reaches 145 degrees. Place cooked pork chops on a plate and let rest.
  3. Cook diced bacon and fresh thyme until crispy in the same pan as pork chops. To serve, place a generous dollop of sweet potato mash on plate, position cooked pork chop on top of mash and top with crispy bacon and drippings.
