Southwestern Chicken

Use Ro Tel dice toatoes with green chilies mild
Slow Cooker

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can diced tomatoes with green chilies
  • 1 jar (16 ounces) chunky salsa, divided
  • 6 boneless skinless chicken breast halves (4 ounces each)
  • 1 cup (4 ounces) shredded cheddar cheese
  • 8 ounces of sour cream

Directions

  1. In a 5-qt. slow cooker,add chiken combine the corn, black beans and diced tomatoes

  2. Cover and cook on low for 6-8 hours or until meat is tender. pour salsa over chicken 1/2 hour before its done. Sprinkle with cheese. Cover and cook 5 minutes longer or until cheese is melted.

  3. Serve over rice
