Cream Puffs

Ingredients

  • 1 cup water
  • 1/2 cup butter, cut in small pieces
  • 1/2 tsp. salt
  • 1 tsp. sugar
  • 1 cup sifted flour
  • 5 eggs

Directions

  1. In heavy saucepan, combine water, butter, salt and sugar. Bring to boil. Remove pan form heat and add flour at once. Stir briskly with a wooden spoon until dough is smooth. Return pan to heat and cook, stirring constantly, until dough leaves sides of pan and forms a ball.
  2. Remove pan from heat and add eggs, one at a time, mixing after each . Spoon dough onto a greased baking sheet and bake at 375 degrees for 45 minutes, until puffs are dry and golden. Cool. Split puffs horizontally and fill with ice cream, whipped cream or crème patisserie.(pastry cream- rich egg custard).
