  • 1 cup self-rising flour, plus more as needed
  • 1 (7oz.) container plain low-fat Greek yogurt (about 1 cup)
  • Cornmeal, for dusting
  • 1/4 cup pizza sauce
  • 1 1/2 cup pizza sauce

  • 30 slices pepperoni
  • 1/2 small yellow or orange bell pepper, very thinly sliced1/2 Anaheim pepper, very thinly sliced
  • 1/2 small Vidalia onion, very thinly sliced

Directions

  1. Heat oven to 475 degrees. In a medium bowl, stir together the self-rising flour and yogurt. When mixture forms a rough, shaggy dough, turn it out onto a lightly floured surface and knead for 5 minutes, working in additional flour as necessary to create a smooth dough.
  2. Press or roll dough to form a 14-inch circle.

  3. Very lightly dust a pizza stone or baking sheet with cornmeal. Lay crust over cornmeal. Spread sauce evenly over crust. Sprinkle 1 cup of the cheese over the sauce, then top with pepperoni, sliced peppers and onions. Sprinkle with remaining cheese.
  4. Bake 10 to 12 minutes or until cheese melts and crust is golden brown.
