Roasted Red Potatoes with Pesto

Prep time: 10 minutes
Cook time: 35 minutes
Serves 6 people

  • 2 pounds red potatoes, washed and diced into 8ths, with skin left on
  • 3 tablespoons of pesto (or enough to well-coat the potatoes)
  • sea salt to taste


  1. oven to 400.

  2. Put diced potatoes into bowl and add enough pesto to coat the potatoes (may not be full 3 tablespoons).

  3. Place on cookie sheet that has been sprayed with cooking spray and bake for 25-35 minutes, stirring once or twice throughout the cooking time. Let them get crispy and golden and soft and delicious!

  4. Add sea salt to taste.
