Citrus-Pecan Mold

Ingredients

  • 1/2 cup lime juice
  • 2 Tbsp. (2 envelopes) unflavored gelatin
  • 1 1/4 cups orange juice
  • 2/3 cup sugar
  • 1/4 tsp. salt
  • 2 cups ginger ale
  • 2 cups orange sections
  • 2/3 cup pecans (about 2 1/2 oz)

Directions

  1. Set out a 1 1/2 quart mold.
  2. Pour lime juice into a small bowl. Sprinkle gelatin evenly over juice. Let stand 5 minutes, to soften.
  3. Heat orange juice until very hot. Remove from heat and immediately stir in softened gelatin until gelatin is completely dissolved. Stir in sugar, then salt, and follow with ginger ale; stirring until blended.
  4. Chill until gelatin mixture is slightly thicker than consistency of thick, unbeaten egg white.
  5. Meanwhile, lightly oil the mold with salad or cooking oil (not olive oil); set aside to drain.
  6. Using a sharp knife, cut away peel and remove sections (by cutting on either side of dividing membrane) from enough oranges to yield 2 cups orange sections. Remove and discard any seeds.
  7. Coarsely chop and set aside pecans
  8. When gelatin mixture is of desired consistency, mix in the orange sections and pecans. Turn into prepared mold and chill in refrigerator until firm.
  9. To serve, unmold onto chilled serving plate.
