Classic Pineapple Lime Mold

Ingredients

  • 1 can (20 oz.) crushed pineapple in juice
  • 2 pkg. (3oz) lime gelatin
  • 1 2/3 cups boiling water
  • 1 cup small curd cottage cheese
  • 1 cup frozen whipped topping
  • 1 cup mini-marshmallows
  • 1/4 cup slivered almonds, toasted

Directions

  1. Drain pineapple, reserve juice. Refrigerate gelatin in boiling water. Stir in reserved juice. Refrigerate until slightly thickened. Fold in pineapple, cottage cheese, whipped topping, marshmallows and almonds. Pour into 13 × 9 inch glass pan or 3 quart mold. Chill 3 hours or until firm Slice or unmold to serve.
