Coffee Jelly

Serves 4 people

Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 2 cups strong hot coffee
  • few grains salt
  • 1 tsp. vanilla
  • 1/4 tsp artificial sweetener
  • Coffee whip: as above plus 2 egg whites

Directions

  1. Sprinkle gelatin on cold water. Add 1 cup hot coffee; stir until gelatin dissolves. Add remaining coffee, salt vanilla and sweetener. Chill until set.
  2. Coffee Whip: Make coffee jelly as above Chill until syrupy. Beat with rotary beater until frothy. Beat 2 egg whites stiff; fold into gelatin mixture. Chill until set.
