Jellied Apple Eggs

Ingredients

  • 1 dozen empty egg shells
  • 1 1/2 cups apple juice
  • 1 1/2 cup cranberry flavored cider
  • 2 envelopes unflavored geltain

Directions

  1. With a large darning needle, very carefully punch a hole in each end of egg, making slightly large hole at broad end. Hold egg over a bowl and blow contents into bowl. Rinse shells , blow water out and seal tiny holes with masking tape. (Leave larger holes open). Put shells back into egg carton, sealed side down.
  2. Pour 1/2 cup juice into small saucepan, 1/2 cup cider into second saucepan. Soften 1 envelope gelatin inn each. Add remaining juice to first pan, remaining cider to second pan. Heat each, stirring, until gelatin dissolves. Chill until slightly thickened. Insert a tiny funnel into hole of each empty egg shell and fill with apple juice or cider mixture. (each is enough to fill about 6 egg shells. Chill until set.. Gently peel off shells.
  3. Or, using plastic Easter eggs that come in half, submerge egg halves in thickened, but not set gelatin, secure 2 halves together; remove and wipe outside clean. Use rubber bands to keep halves together if desired.

  4. Chill until firmly set. Dip each egg in warm water for a few seconds, and then carefully separate plastic eggs, and empty gelatin out.
