Applesauce Sherbet

Ingredients

  • 6 medium tart cooking apples
  • 1/4 cup water
  • 1/2 cup sugar
  • 1/4 tsp. lemon juice
  • 2 cups chilled buttermilk
  • 1 cup sugar
  • 2 Tbsp. lime juice
  • Green food coloring
  • 1/2 cup Brazil nuts

Directions

  1. Set refrigerator to coldest temperature Set a bowl and a rotary beater in refrigerator to chill. Set out a heavy saucepan.
  2. For applesauce: Wash, quarter , core and peel the apples. Put apples into the saucepan with the water. Bring to boiling. Cover and simmer, stirring occasionally, 15 to 20 minutes, or until apples are soft and somewhat transparent. Add the 1/2 cup sugar and lemon juice and stir until sugar is dissolved. Cool. Place in refrigerator to chill completely.
  3. For Sherbet: Blend together buttermilk, remaining sugar and lime juice with chilled applesauce. Stir until sugar is dissolved. To tint sherbet, mix in one or more drops food coloring.
  4. Pour sherbet into refrigerator trays. Freeze until sherbet is mush-like in consistency.
  5. Turn into chilled bowl and beat thoroughly with chilled rotary beater. Return sherbet to

  7. Coarsely chop Brazil nuts. Sprinkle over each serving.
