Coffee Cake

Ingredients

  • 1 cup brown sugar
  • 1 cup white sugar
  • 1 cup margarine or butter
  • 3 cups flour
  • 2 well-beaten eggs
  • 1 cup+ 2 Tbsp. buttermilk
  • 1 tsp. baking soda
  • 1 tsp. salt
  • 1 tsp. vanilla
  • 1 cup raisins

Directions

  1. Crumble first 4 ingredients together, set aside 1 cup of crumbs for topping.
  2. Mix eggs, buttermilk, soda, salt, vanilla and raisins. Beat all together until smooth. Pour batter into a 9 × 12m x 2 inch greased and floured pan
  3. Mix 1 cup of nuts with crumb mixture, if desired. Sprinkle on top of butter. Bake at 350 degrees for about 1 hour. While still warm, drizzle thin powdered sugar icing over cake.
  4. Use frozen orange juice in the powdered sugar icing, plus oleo the size of a walnut. (?)
