Baked Alaska

Ingredients

  • 6 3-inch rounds of sponge cake
  • 4 egg whites
  • 1/8 tsp. salt
  • 6 Tbsp. sugar
  • 1 tsp. vanilla
  • 6 2-inch rounds hard-frozen ice cream

Directions

  1. Turn on oven to 450 degrees. Cover wooden board with heavy paper. Place cake squares (cut about 1/2 to 3/4 inch thick.) on board. Beat egg whites until frothy, add salt. Add sugar very gradually and continue heating until stiff. Add vanilla and beat to blend. Place ice cream squares on cake. Cover thickly with meringue, being sure that no ice cream is exposed. Pop into hot oven, board and all. Bake about 1 to 2 minutes until golden brown. keep an eye on it, for it browns fast. Serve immediately. If you like the extra fancy touch, you can top the ice cream squares with shopped nut meats or fruit before covering with meringue.
