Ghoulish Pumpkin Dip

Ingredients

  • 2 cloves garlic
  • 1 (15 oz.) can chickpeas, drained and rinsed
  • 1 (15 oz.) can pure pumpkin
  • 2 Tbsp. almond or peanut butter
  • 1 tsp. ground cumin
  • Juice of 1 lemon
  • 1 tsp. olive oil
  • 1/2 tsp. salt
  • Dash cayenne pepper
  • chopped black olives
  • 3-4 bell peppers of various colors
  • fresh vegetables for dipping

Directions

  1. Puree all ingredients, except olives, in a food processor. add ice water until desired consistency is achieved. Pour into shallow bowl and decorate with chopped olives to resemble a pumpkin face.
  2. Cut tops off of bell peppers and carefully remove the center section and seeds of each pepper. Cut faces into the sides of peppers. Fill with vegetables like broccoli and cauliflower florets and carrot sticks. Serve with pumpkin dip.
