Bourbon Molasses Butter

Ingredients

  • 1/2 cup good-quality bourbon
  • 1 Tbsp. sugar
  • 12 Tbsp. (1 1/2 stick) unsalted butter, at room temperature
  • 3 Tbsp. molasses
  • Pinch of fine sea salt

Directions

  1. In a small saucepan, combine bourbon and sugar. Bring to a boil over high heat. Cook until reduced by half, about 5 minutes. Let cool.
  2. Put butter, molasses, salt and bourbon mixture in a food processor and process until smooth. Scrape into a bowl, cover with plastic wrap and refrigerate 1 to 8 hours to allow the flavors to meld. Remove from the refrigerator about 30 minutes before using to soften.
  3. makes about 1 cup.

  4. Serve as a spread on biscuits, pancakes or waffles.
