Chickpea Fritters Supreme

Very delicious luncheon dish.
Serve with sour cream and chilli sauce on the side

Ingredients

  • 1 x 400 gr can chickpeas, drained and smashed
  • 1 x 400 gr can whole corn kernels, drained
  • 2 x medium zucchini, grated
  • 2 x spring onions, sliced
  • 2 eggs, beaten
  • 1/2 C milk
  • 3/4 C self raising flour
  • little oil for frying

Directions

  1. Mix all ingredients together until blended.

  2. Cook spoonful lots, on both sides, in a little oil in heated frying pan until golden and crispy.

  3. Serve while hot with a spoonful each of sour cream and chilli sauce on the side.
