Pasta Bake

A large recipe, simple and quick to make.
A way to use up leftover vegetables too.
Serving size is generous for 8 people, especially if serving with additional salad

Prep time: 15 minutes
Cook time: 30 minutes
Serves 8 people

Ingredients

  • 500 gr macaroni pasta, cooked as per instructions
  • 700 gr jar of tomato pasta sauce of your choice
  • 4 cups cooked vegetables eg: carrots, peas, corn, broccoli, cauliflower, onion, beans, asparagus, aubergine etc
  • 6 eggs, lightly beaten
  • 1 cup cream
  • 1 T dried Italian herb mix
  • 300 gr cheese, grated

Directions

  1. Grease a large baking or roasting dish.

  2. Place cooked pasta on base.

  3. Cover with the cooked vegetables and the pasta sauce of choice.

  4. Mix together eggs, cream and herbs and pour over the above.

  5. Top with grated cheese.

  6. Bake approximately 30 minutes at 180oC, until ‘sauce’ mixture has set and cheese is golden in colour.
