Collard Greens

Ingredients

  • 1 1/4 pounds collard greens
  • 1 T water
  • 2 slices Canadian Bacon (2 oz.)
  • 1 T olive oil
  • 1 small onion, chopped (about 1 cup)
  • 1 T cider vinegar
  • 1/8 tsp. red pepper flakes
  • 3/4 cup low-sodium chicken broth
  • salt to taste

Directions

  1. Cook collards with 1 T water in a large bowl, covered with plastic wrap for 5 minutes in microwave. Brown Canadian Bacon in skillet for 2 minutes per side till brown. Chop and set aside. Saute onion in oil for 3 minutes, til soft. Add drained greens, vinegar, red pepper flakes, bacon and chicken broth. Bring to a boil and simmer on low for 30 minutes.


  2. Ms. Krieger also adds 1 T pure maple syrup before simmering, but I don’t use that ingredient.
