Deep-Dish Apple Cobbler

Ingredients

  • 5 Granny Smith apples, thinly sliced
  • 2 Tbsp. sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground nutmeg
  • 2 tsp. lemon juice
  • 2 large eggs
  • 1 cup sugar
  • 2 Tbsp. butter, melted
  • 1 tsp. vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp. baking powder
  • 1/4 tsp. salt

Directions

  1. Combine first 5 ingredients in a large bowl, stirring to coat apple slices; pour into a lightly greased 8-inch square baking dish.
  2. Beat eggs and sugar at medium speed with an electric mixer until blended. Add butter and vanilla, beating until smooth.
  3. Combine flour, baking powder, and salt; fold into egg mixture. Spread over apple slices.
  4. Bake at 350 degrees for 30 minutes or until lightly browned. Serve with whipped cream or vanilla ice cream.
