Crispy Ribs with Plum Sauce

Ingredients

  • 5 lbs. spareribs
  • 3 lbs. fresh plums, cut into wedges
  • 3 Tbsp. soy sauce
  • 1 1/2 Tbsp. cornstarch
  • 1 1/2 Tbsp. sugar
  • 2 tsp. grated fresh ginger
  • 2 garlic cloves, minced

Directions

  1. Cut spareribs into 5 or 6 sections, and place in a single layer in a large roasting pan.
  2. Bake ribs, covered, at 350 degrees for 30 minutes.
  3. Process plum wedges in a blender or food processor until smooth, stopping once to scrape down sides.
  4. Bring plum puree, soy sauce, and next 4 ingredients to a boil in a heavy saucepan over medium-high heat; boil, stirring constantly, 8 to 10 minutes or until mixture is thick and clear.
  5. Reserve half of sauce for dipping; brush ribs with half of remaining sauce
  6. Grill ribs, without grill lid, over medium heat (300 to 350 degrees) about 30 minutes or until done, turning every 6 to 8 minutes and brushing with remaining basting sauce. Serve ribs with reserved dipping sauce.
