Greek Garbanzo Stew

Ingredients

  • 1 medium onion, diced
  • 1 Tbsp. olive oil
  • 2 garlic cloves, minced
  • 1 (28 oz.) can diced tomatoes
  • 1 (15 oz.) can garbanzo beans, rinsed and drained
  • 1 (14.5 oz.) can vegetable broth
  • 2 Tbsp. tomato paste
  • 1/2 tsp. dried rosemary
  • 2 tsp. dried oregano
  • 1 tsp. Greek seasoning
  • 1/4 tsp. salt
  • 1/2 tsp. pepper
  • 1 (6 oz.) pkg. fresh baby spinach
  • Crumbled feta cheese (optional)

  1. Sauté onion in hot oil in a
  2. Dutch oven over medium-high , if desired.4 to 5 minutes or until tender. Add garlic, and cook 1 minute. Stir in tomatoes and next 8 ingredients. Bring to a boil; reduce heat to low, and simmer, stirring occasionally, 15 minutes. Stir in spinach and chopped parsley; cook 5 minutes. Top with crumbled feta cheese
