Pumpkin Bread Pudding

Ingredients

  • 6 cups French Bread cubes, toasted
  • 2 cups half-and-half
  • 1 1/2 cups sugar
  • 3 large eggs. lightly beaten
  • 1 (15 oz.) can pumpkin
  • 1/2 cup raisins
  • 1/2 cup chopped toasted pecans3 Tbsp. butter, melted
  • 2 tsp. pumpkin pie spice
  • 1 tsp. grated orange rind
  • Whipped cream

Directions

  1. Place bread in a lightly greased 11 x7-inch baking dish. Pour half-and-half over bread.
  2. Stir together sugar and next 7 ingredients, and gently fold into bread mixture.
  3. Bake at 350 degrees for 50 to 60 minutes or until set. Serve with whipped cream, if desired.
