Daufuskie Shrimp

Ingredients

  • 2 lb. unpeeled, medium-size fresh shrimp
  • 7 bacon slices, chopped
  • 2 medium onions, diced
  • 1 large green bell pepper, diced
  • 3 jalapeno peppers, seeded and minced
  • 4 garlic cloves, minced
  • 2 (28 oz.) cans diced tomatoes
  • 1/4 cup cocktail sauce
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • Hot cooked grits

Directions

  1. Peel shrimp, and devein, if desired. Set aside.
  2. Cook bacon in a large skillet until crisp; remove bacon and drain on paper towels, reserving 3 Tbsp. drippings in skillet.
  3. Sauté onion in hot drippings 5 to 7 minutes. Stir in bell pepper, jalapenos and garlic; sauté 7 to 9 minutes or until tender.
  4. Stir in tomatoes and next 3 ingredients. Reduce heat, and simmer, stirring occasionally, 1 hour. Stir in shrimp and cook 5 minutes. Serve over hot cooked grits, and sprinkle with bacon.
