Grilled Chicken Breasts with Fig-and-Melon Compote

Ingredients

  • 1 cup milk
  • 1/3 cup honey
  • 8 skinned and boned chicken breast halves
  • 1 cantaloupe, peeled, seeded, and finely chopped
  • 1 honeydew melon, peeled seeded and finely chopped
  • 1 papaya, finely chopped
  • 3/4 cup fig preserves
  • 1 Tbsp. chopped fresh mint
  • 1 Tbsp. lime juice
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • Garnish: fresh mint sprig

Directions

  1. Combine milk and honey in a shallow dish or large heavy-duty zip-top plastic bag; add chicken. Cover or seal and chill 8 hours, turning occasionally.
  2. Stir together cantaloupe and next 5 ingredients, cover and chill 2 hours
  3. Remove chicken from marinade, discarding marinade. Sprinkle with salt and pepper.
  4. Grill, covered with grill lid, over medium-high heat (400 to 450 degrees) 6 minutes on each side or until done.
  5. Top chicken with fruit mixture. Garnish, if desired.
