Skillet Squash Sandwiches

Ingredients

  • 1 medium-size yellow squash
  • 1 small zucchini
  • 1 shallot, minced
  • 1 Tbsp. olive oil
  • 4 plum tomatoes, quartered
  • 1/2 tsp. salt
  • 1/2 tsp. freshly ground pepper
  • 1 Tbsp. red wine vinegar
  • 1/2 cup mayonnaise
  • 2 Tbsp. chopped fresh basil
  • 2 garlic cloves, minced
  • 4 sandwich rolls, split
  • 8 fresh mozzarella cheese slices
  • 16 fresh basil leaves

Directions

  1. Cut squash and zucchini lengthwise into slices.
  2. Saute shallot in hot oil in a large skillet over medium heat until tender. Add squash and zucchini, and cook, stirring occasionally, until crisp-tender. Add tomato and next 3 ingredients; cook, stirring occasionally, until tomato is thoroughly heated.
  3. Combine mayonnaise, chopped basil, and garlic; spread evenly on roll tops. Spoon half of vegetable mixture evenly on roll bottoms; top each with 2 cheese slices, remaining vegetable mixture , an basil leaves. Replace tops, and serve immediately.
